Today in the kitchen we are cooking up probably the easiest dish I have ever made!   Now I know I should use my slow cooker more often, so this recipe is the perfect excuse to do so!
I’m not even kidding, this entire recipe takes 2 minutes total and is under $10 and is so delish!  This slow cooker salsa chicken recipe fed the two of us healthy dinner portions, with leftovers for lunch the next day.  I promise you will be so happy with this recipe, it will be on your dinner rotation all season long.

Let’s do this!


Slow cooker (we have this one)


2 chicken breasts
1 jar of salsa (I use medium for an added kick)
1 can of black beans
1 can of corn
salt, pepper, chili seasoning


1.  Drain both the black beans and corn and add to the bottom of the slow cooker.
2.  Place two chicken breasts on top of the beans and corn and sprinkle with S&P and chili seasoning.
3.  Pour jar of salsa over the chicken breasts.
4.  Cook on low for 6 hours.
Optional:  The chicken is so tender that merely touching it, it will easily shred for you!  I took my spoon and lightly broke the chicken into pieces for a shredded look – so good!
Also optional: I served mine over brown rice for more of a burrito bowl, but this is also delish on its own, over a bed of greens or in a Tumaro’s wrap with some avocado and Greek yogurt on top!
