Today we’re in the kitchen making my zoodles with clam sauce recipe!
On weeknights, there is nothing more that I love than an inexpensive, quick and healthy dinner. My Zoodles with Clam Sauce recipe hits each of those points and is delicious, not to mention it takes just 10 minutes for under $10! Also, this is the perfect meal to make while zucchinis are still in seasons and so fresh!
Let’s do this!
What you’ll need:
Large sauce pan
2 tbs olive oil
1 tbs minced garlic
1 tsp red pepper flakes (optional)
2 medium sized zucchinis
one pint homemade clam sauce (we bought from our local deli over the weekend)
Let’s do this:
- Before you begin cooking, spiralize two medium sized zucchinis and set aside. We swear by this easy spiralizer (this is also another great option.)
- In a large skillet, lightly cook minced garlic in olive oil until fragrant- any longer and the garlic will become bitter and you don’t want that. As soon as you smell the garlic, add the pint of clam sauce. Add red pepper flakes for taste, if desired.
- Once the clam sauce begins to lightly bubble, add the spiralized zucchini. Let cook for 3-5 minutes max until lightly tender – try not to overcook or they will become wet and soggy.
- Serve with freshly grated parmesan over the top.
