Christmas Cookies: Ricotta Egg Biscuits

It is a running joke in my family that I didn’t necessarily inherit the baking skills everyone else has, but I just like to think that I don’t have as much practice in the kitchen – ha!  With that being said, I still wanted to contribute to our family traditions over the holidays and chose to make my favorite cookie recipe: Ricotta Egg Biscuits.  These cookies are so fluffy and delicious, without being too sweet.  They’re great after dinner with a cup of tea or for breakfast as a holiday treat.  Follow along for this easy, tasty recipe.

What You’ll Need:

Baking Sheet (I use this one and this oven mitt pictured above)

Ingredients:

Cookies:

2 cups white sugar

1 cup butter, softened

15 ounces ricotta cheese

2 teaspoons vanilla extract

2 eggs

4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking powder

1 teaspoon salt

Frosting:

1 1/2 cups confectioners’ sugar

3 tablespoons milk

2 crushed candy canes (optional)

(You can also add extract to taste. Vanilla or almond always add nice flavor. Optional. )

Let’s Do This:

Preheat the oven to 350 degrees and grease cookie sheets (I used two to bake more cookies at a time).  Beat together sugar, butter, ricotta, eggs and vanilla.  Add flour, baking powder and salt.  Mix until doughy.  Using a teaspoon or your hands, scoop one-inch balls onto baking sheet.  Cook for approx. 15 minutes or until golden brown.  Remove from oven and cool on counter or baking rack.

In the meantime, mix together confectioners’ sugar and milk.  If desired, crush candy canes by placing in a sealed plastic bag and breaking with a wooden spoon or rolling pin.

Once cookies have cooled, spoon on enough icing and top with crushed candy cane for a festive touch.
