Let me start by saying that I never even tried lentils until probably about two years ago. I always knew that they were good for me, but never actually tried them – they always had a strange stigma attached to them, similar to people’s thoughts on Brussels sprouts, until you try them and love them! That’s how I always felt about lentils, and I also always assumed they were such a process to make, but I was so wrong. This easy lentil soup took me under 15 minutes, cost me under $15 and was so easy to make and it’s so healthy! I hope you try it, too!

WHAT YOU’LL NEED
Dutch Oven/Large Sauce Pan (I use this one)
1 garlic clove, chopped
1 white onion, chopped
1 carrot, chopped
1 stalk celery, chopped
1 can diced tomatoes (14.5 oz)
1 (32 oz) container low-sodium vegetable broth
2 cups lentils (I used green)
salt and pepper to taste
LET’S DO THIS
In dutch oven, add olive oil and garlic. Cook garlic for about 1 minute or until you can smell it, do not let it burn! Add onion, carrots and celery. Cook until onion is translucent and veggies are soft (about 3-4 minutes).
Add tomatoes, broth and lentils. Bring to a boil (about 10 minutes) then let simmer for 30-45 minutes or until you are ready to serve.
