I absolutely love pesto! I enjoy putting it over pasta, as the sauce on our pizza and even to season fish. Over the weekend, I grabbed some fresh basil from our farmer’s market (originally to add to our tomato sauce) and there was so much that I decided to make this easy homemade pesto. 5 ingredients, 2 steps. Let’s do it!
TOTAL TIME: 5 minutes
TOTAL COST: UNDER $10
What You’ll Need:
Food Processor/Blender (I use this one)
1/2 cup of raw almonds (alternative: pine nuts)
3-4 cloves garlic
3 cups fresh basil, packed
1/2 cup grated parmesan
1/2 cup extra-virgin olive oil
Let’s Do This:
In your food processor/blender, add almonds, basil, garlic and cheese. Pour in olive oil slowly (not all at once) to create the perfect texture. Blend and pulse until smooth, top with remaining olive oil.
This should last in the fridge for approx. one week (splash olive oil over the top before storing).
BONUS: I tossed this pesto over Chickpea pasta with roasted cherry tomatoes and cannelloni beans. It was delish!!
